“Elevating The Art of Simple Rustic Food”

Fifteen years ago, a small shop opened on Capitol Way in downtown Olympia. This shop was called Capitale Espresso Grill. It offered simple food at reasonable prices and received a warm embrace.

In a time before you could purchase fresh mozzarella, prosciutto, parmesan reggiano, and rustic bread at your local supermarket, its owner Jeff Taylor drove to Seattle to obtain these ingredients to sell in his café. Its casual, unpretentious atmosphere struck a chord.

Much has changed in the intervening years; dozens of restaurants have opened in our town, fancy and not, yet few have captured the spirit of that simple place.

Capitale was sold and Jeff went on to other ventures: Louisa Ristorante and Waterstreet Café and Bar, both evolutions in his culinary journey, a trip that has fed many fellow Olympians well. But things sometimes come full circle, and the time came for an updated version of that original place.

Still in love with simple food, Jeff Taylor is pleased to present Acqua Via. Dedicated to the presentation of hand made products, charcuterie, breads, cheeses, pastas, wines and pastries, Acqua Via offers the same casual atmosphere and dedication to quality that was launched almost twenty years ago.
